    Steak Skewers and Potato Skewers

    List of Ingredients




    6 3-ounce pieces of top sirloin or strip loin filet
    1/3 cup Italian dressing
    2 small zucchini, cut lengthwise and then crosswise
    1 small yellow squash, cut in fourths
    4 large domestic mushrooms, stems removed
    1 small red onion, cut in fourths
    1 firm Roma tomato, cut in fourths
    4 garlic cloves, blanched
    2 12-inch metal skewers
    1 tablespoon blackening spice

    Recipe



    Method:
    Marinate the beef in half of the Italian dressing in the refrigerator for 2 hours.

    With the remaining Italian dressing, baste the squashes, mushrooms, and onions and grill for 2 minutes, turning once.

    To assemble:
    Alternate the vegetables and garlic with the beef on the two skewers, sprinkle with blackening spice, and cook on the grill until the beef reaches desired doneness:
    - Medium rare 6 minutes
    - Medium to medium-well 8 minutes
    - Well done 10 minutes

    Potato Skewers Ingredients:
    6 baby red or white potatoes
    2 tablespoons butter, melted
    ½ teaspoon cumin
    ½ teaspoon cilantro, chopped
    2 12-inch metal skewers

    Method:
    Cook the potatoes for 30 minutes, rinse in cold water, and cut each potato in half. Place the potatoes on the skewers and grill for 8 minutes, turning several times, while brushing with the butter-cumin-cilantro mixture.

    Note: If grilling the beef skewers and potato skewers at the same time, place the potato skewers on the cooler part of the grill to prevent over-cooking.
