Carmelized Onion & Parmesan Cheese Soup

2 Tbsp Oil
2 C Sliced White Onions -- Thick Sliced
2 Tbsp Minced Garlic
1 Bay Leaf
2 Tsp Salt
1/2 Tsp Fresh Black Pepper
2 Qt Chicken Stock
3 Whole Garlic Cloves
1 Tsp Fresh Basil
1 Tsp Fresh Chopped Thyme
2 C Day Old French Bread -- Cubed
1/2 C Heavy Cream
1/2 C Fresh Parmesan Cheese
1 Tbsp Fresh Chopped Parsley
Recipe
In a soup pot, heat oil. When hot add onions, whole cloves and bay leaf. Season with salt and pepper. Saute onion until they are caramelized, about 7 mins. Stir in the stock, minced garlic, basil and thyme. Bring to a boil. Reduce to simmer and cook for 40 minutes. Turn heat back up and whisk in bread and cream. Continue whisking until bread has dissolved into the soup for about 10 mins. With a hand held blender, puree the soup until smooth. Whisk in the cheese and parsley. Season with salt and pepper.
