Lasagna-Style Soup

- 1 large yellow onion, chopped
- 2 eaches green and/or red bell peppers, chopped
- 2 cloves garlic, minced
- 1 pound lean ground beef
- 1/2 pound ground Italian sausage
- 8 cups water
- 9 cubes HERB-OX® Instant Beef Bouillon
- 2 (14 1/2-ounce) cans chopped tomatoes with basil, garlic and oregano
- 8 ounces campanelle pasta or mafalda (mini-lasagna) pasta, broken into pieces
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste

In large stockpot, over medium-high heat, saute onion, bell peppers, garlic, ground beef and Italian sausage until meat is cooked through, about 15 minutes; drain and excess fat. Add water, bouillon, tomatoes, pasta and Italian seasoning. Bring mixture to a boil. Reduce heat and simmer until pasta is cooked through, about 10-12 minutes. Season soup with salt and pepper. If desired, top with ricotta and Parmesan cheese.
