3 cups grated squash
3 cups sugar
1-1/2 cups oil
4 eggs
1/2 cup chopped pecans
3 cups flour
2 tsp. baking powder
1 tsp. soda
1-1/2 tsp. cinnamon
1/2 tsp. salt
3 oz. cream cheese
2 cups powdered sugar
1/2 cup chopped pecans
1 stick margarine
1 tsp. vanilla
Recipe
Grease & flour a bundt pan. Mix squash, sugar, oil, & eggs. Sift together flour, baking powder, soda, salt, & cinnamon. Gradually add flour mixture to squash mixture. Bake at 350° for 1 hour. Allow cake to cool & ice with the following. Blend together cream cheese, powdered sugar, vanilla, stick of margarine, & 1/2 cup pecans. Spread on cooled cake.
