Glazed Roasted Onions

4 sweet onions, such as Vidalia
salt & black pepper
3 T. orange juice
1 T. balsamic vinegar
2 T. olive oil
Recipe
Preheat oven to 425°F. Peel onions, leaving the root intact, then cut them through in half. The root will hold them together during baking. Place onion halves cut sides down in a small baking pan just big enough to take them all in a single layer. Season lightly, them spoon on the orange juice, vinegar and olive oil. Roast in the hot oven for 25-30 minutes, basting occasionally. Serve onions warm or at room temperature.
