2 Tbs. olive oil
1 large red onion, chopped
1 clove garlic, minced
3 small zucchini, thinly sliced
10 ounces frozen artichoke hearts, thawed
3 cups Italian style peeled tomatoes, drained and cut into wedges
1/2 tsp. basil, or 1 Tbs. fresh, chopped
3 ounces feta cheese, crumbled
Recipe
Heat oil in a heavy nonstick skillet over medium heat. Saut� onion and garlic 5-7 minutes, stirring frequently until onion is translucent. Add zucchini and artichoke hearts. Saut� another 4-5 minutes or until zucchini is almost tender. Stir in tomatoes and basil and saut� another 2-3 minutes or until tomatoes soften. Remove from heat. Add feta cheese. Toss before serving.
