Marinated Vegetables (Italian Style)

9 Cups Assorted Vegetables (fresh)
3 cloves garlic , minced
1/2 C. Corn Oil
1/2 C. Cider Vinegar
1/2 C. water
1 tsp. Salt
1/2 tsp. black pepper
1 tsp. Oregano or Italian seasoning
1 C. pitted black olives
Recipe
In large skillet combine all ingredients, except olives. Bring to a boil. Reduce heat, cover, simmer 5 minutes or until vegetables are tender-crisp. cool, add olives. Transfer to bowl or storage container. Cover, chill 6 hrs. or more.
