Roasted Garlic & Spinach Spirals

1 whole head fresh garlic
3 c. fresh spinach leaves
1 can (15 oz.) white beans, rinsed and drained
1 tsp. dried oregano leaves
1/4 tsp. black pepper
1/8 tsp. ground red pepper
7 (7 in) flour tortillas
Recipe
Trim top of garlic just enough to cut tips off center cloves; discard tips. Moisten head of garlic with water; wrap in foil. Bake at 400-F for 45 minutes or until garlic is soft and has a mellow garlicky aroma; cool. Remove garlic from skin by squeezing between fingers and thumb; place in food processor.
Remove stems from spinach and discard. Finely shred leaves by stacking and cutting several leaves at a time. Place in medium bowl. Add the next 4 ingredients to food processor. Process until smooth. Add to spinach; mix well.
Spread mixture onto tortillas; roll up. Trim 1/2-in. off ends of rolls; discard. Cover and refrigerate for 1-2 hours. Cut rolls into 1-inch pieces. Serve.
