1 small russet potato
1/4 cup lowfat cottage cheese
1 tablespoon salsa
1 tablespoon cilantro -- chopped

Scrub potato and pierce with fork on both sides. Microwave on HIGH (100% power) 3 to 5 minutes, or until potato feels soft when pressed. (Turn potato over after two minutes for more even cooking.) Let stand 2 to 3 minutes. Slice potato in half and scoop potato pulp from shell, leaving 1/4 inch border. In small bowl, mash potato pulp with cottage cheese, salsa and cilantro. Spoon mixture back into shells. Sprinkle with paprika. Microwave on HIGH 2 minutes, or until heated through.
