Spicy Zucchini

2 tsp. olive oil
1-1/2 lbs. zucchini, cut into 1/2 inch dice
1/4 cup scallions, cut into 1/2 inch pieces
2 cloves garlic, minced
1/4 cup salsa
2 ounces breakfast cheese, room temperature, cut upRecipe
Heat oil in a heavy nonstick skillet over medium heat. Sauté zucchini, scallions, and garlic 3 minutes until zucchini is just tender. Stir in salsa, cheese, and salt to taste. Simmer 1 minute and transfer to serving bowl.
