Mom's Clam Chowder

2 6 oz cans clams
1 cup chopped onion
1 cup finely chopped celery
2 cups diced potatoes or more
3/4 cup butter (no substitutes)
3/4 cup flour
1 qt half and half
1 1/2 tsp salt
3 Tbsp red wine vinegar
pepper to tasteRecipe
Cook celery and onion in small pan covered with juice from clams until soft. Boil potatoes in water until done. Melt butter in stock pan; add flour slowly, stirring until smooth. Add half and half, salt and pepper; cook until thickened. Add undrained veggies and drained potatoes and clams. Just before serving stir in red wine vinegar.
