    2 cups torn arugula (2.8)
    1 cup romaine lettuce torn (1.8)
    1 cup watercress, torn (4.4)
    2 yellow gala apples, chopped (3.8)
    1/2 cup red onion, thinly sliced (2)
    1/3 cup pumpkin seeds, chopped (4.1)

    Dressing
    1/4 cup apple juice (.6)
    2 tbsp cider vinegar (.4)
    2 tbsp canola oil (3.6)
    2 tbsp maple syrup/honey (.2/.6)
    2 tbsp Dijon mustard or SCD legal mustard (2)
    1/4 tsp sea salt (.1)
    1/8 tsp white pepper (.2)

    Recipe



    In a large bowl, combine the salad greens, apples, onion, and pumpkin seeds. In a small bowl, whisk the dressing ingredients. Drizzle over salad; toss to coat. Serves 6.
