Clam Pie
This is good cold,the next day.
List of Ingredients
- 2 9" pie crusts
- 2 tbs. saltine cracker crumbs
- 2 cans minced clams,7 or 8 oz. cans
- 1/2 cup milk
- 2 tbs. butter
- 1/2 cup diced onion
- 1/4 cup flour
- 2 cups cooked potato,cubed
- salt to taste
- 1/4 tsp. pepper
- 1/4 tsp. whole thyme leaves
Instructions
- Prepare pie crust.Fit one crust into a 9" deep pie pan.Sprinkle the cracker crumbs over the bottom.
- Drain clams,reserving one cup of liquid.Add the milk to the clam juice.Melt butter and saute the onions,until soft.Stir in the flour and spices.Cook and stir constantly for a few minutes.Gradually stir in the liquid,and cook and stir until thickened.
- Add potatos and clams.Mix, and pour into shell.Fit the top crust,fold and seal edges.Cut a couple of steam vents into the top,and bake at 375 degrees for 40 minutes.Let stand 15 minutes before slicing.
