Mussels With Parsely and Garlic

Use fresh or frozen mussels.I like this over a pasta,Fusili being my favorite.Usually I add one more tablespoon of butter and more garlic.If you feel like it pour a half a cup of dry white wine in the pan also.You don't even need to make the butter,parsely,garlic,salt,and pepper into a paste,Just sprinkle right on top,and pop it in the oven
List of Ingredients
- 2 # mussels,cleaned and beards removed
- 3 cloves garlic,coarsely chopped
- 1 cup fresh flat leaf parsely
- 1/2 stick unsalted butter,cut into pieces
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground pepper
Instructions
- Preheat oven to 450 degrees.Spread mussels in a 13 X 9 baking dish.Blend all remaining ingredients to a paste in a food processor.Spoon mixture over mussels.Cover tightly with foil and bake in middle of oven,12 to 15 minutes.(discard any unopened mussels)
Final Comments
If using frozen mussels,do not defrost,just rinse and use.Cooking time is the same as fresh.
