Lemon Baked Radiatore with Shrimp
This stuff is just too good! The Gruyere cheese is a bit pricey,but it really makes this dish.Use a couple of teaspoons of dried dill if you don't have fresh.
List of Ingredients
- 3 tsp. fresh lemon zest
- 1/2 cup chopped leek
- 1/2 cup chopped carrot
- 1/2 cup chopped celery
- 2 tbs. butter
- 1 tbs. olive oil
- 3 tbs. flour
- 2 cups chicken stock
- 1 1/2 # shrimp,peeled and deveined
- 1# cooked Raditore pasta
- 1/4 cup chopped fresh dill
- 2 cups or 6 oz. grated Gruyere cheese
Instructions
- Butter a shallow baking dish and sprinkle with 1 tsp. of the lemon zest.Saute the vegatables in the oil and butter for about 5 minutes.Add flour.Cook and stir 3 minutes.Whisk in the chicken stock and bring to a boil.Add 2 tsp lemon zest,salt, and pepper to taste.Simmer untill thickened,about 3 minutes.Add the shrimp,cook for 1 minute.
- Combine this mixture with the pasta,dill,and 1 1/2 cup Gruyere cheese.Put in the prepared baking dish and top with the remaining cheese.Bake 350 degrees for 30 minutes
