Great use for that leftover spagetti in the refrigerator that you can't seem to part with!
List of Ingredients
8 oz. Spaghettini,or use thin Spagetti
1 cup grated mozzarela cheese
2 eggs,beaten
4 oz.diced pepperoni,ham, or salami
1/2 tsp. oregano
2 tbs. oil
Instructions
Cook pasta,drain and rinse with cold water.In a large mixing bowl,toss all ingredients together,except the oil.Season to taste with salt and pepper.
Heat the oil in a medium saute pan.Add mixture to the pan,and pat out evenly.Cook about 5 minutes,or till lightly brown and crisp on the bottom.Slide out on to plate.Flip it over and back into the pan.Cook this side the same as the first.
To serve,cut into wedges as you would with a pizza.Garnish with tomato slices,olives,extra cheese etc..
