    Leave the bacon out if you want,but it's only two slices!


    List of Ingredients


    • 1 large fresh eggplant
    • 2 strips bacon,cut into 2" lengths
    • 1/4 cup white vinager
    • 1/4 cup olive oil
    • 1/4 teaspoon onion powder
    • 3 or 4 cloves garlic,cut into slivers
    • 1/2 teaspoon dried basil
    • salt and pepper
    • 1/2 green or red bell pepper,cut into 2'' squares


    Instructions


    1. Preheat oven to 325 degrees.Slice eggplant into 1/2 inch slices,not quite all the way through.Spread slices apart and sprinkle with the salt ,basil,and onion powder.Stuff between the slices with the bacon pieces,green pepper,and garlic slivers.Blend oil and vinager together and pour over the top. Cover and bake for 1 hour,basting with pan juices after 30 minutes.Serve in slices,with pan juices
