Mandarin Orange Cake

1 box yellow cake mix
½ c. Oil
4 eggs
1 sm. Can mandarin plus juice
(Frosting)
1 sm. can mandarin oranges, drained and crushed in processor
1 sm. Pkg. Vanilla instant pudding
1 8 oz. Cool Whip***
Directions for cake
Mix all ingredients and beat for 2 minutes. Pour into a greased and floured bundt pan. Bake at 350 degrees for about 38 minutes, or until tested done. Cool completely on wire rack.
Frosting:
Mix the thawed cool whip with the pudding and crushed mandarin orange slices. Mix completely. Put on cooled cake. Refrigerate for 2 hours.
*** For those like me who do not like Cool Whip, take 16 oz. heavy cream and whip in Kitchen Aid. Add the pudding and mandarin oranges.

OK...here's the variation:
for the cake:
same as before, but
use a devils food cake mix in place of yellow
1/2 bag frozen blackberries in place of oranges
for the frosting
use chocolate pudding mix instead of vanilla
use the other half bag of blackberries in place of the oranges, but put them in the processor and chop slightly.
