    Bacon Wrapped Chicken Mushroom Kabobs

    List of Ingredients


    • 2 whole large chicken breasts (4 halves)
    • 10 large mushrooms
    • 1/4 cup soy sauce
    • 1/4 cup cider vinegar
    • 2 tablespoons honey
    • 2 tablespoons salad oil
    • 1 (8 ounce) can sliced pineapple
    • 1 (8 ounce) package sliced bacon


    Instructions


    1. Skin and bone chicken breasts; cut each chicken breast in half and then into 5 chunks. Cut each mushroom in half.
    2. In a large bowl, mix mushroom halves, chicken pieces, soy sauce, cider vinegar, honey and salad oil; set aside. Cut pineapple slices into 3 pieces. Cut bacon in half crosswise. Wrap each bacon piece around a piece of chicken and a mushroom half.
    3. On 4 long skewers, thread bacon wrapped chicken, mushroom and pineapple pieces, Reserve soy sauce mixture.
    4. Place skewers on grill over medium heat. Cook for about 15 to 20 minutes until chicken is fork tender and bacon is crisp, brushing kabobs with soy sauce mixture and turning skewers occasionally. (Can also be broiled in indoor oven for same length of time.)
