    • 6 cups milk
    • 2 cups yellow cornmeal
    • 2 teaspoons baking powder
    • 1/2 teaspoon black pepper
    • 6 large eggs, separated
    • 8 strips cooked bacon, drained and crumbled
    • 1/3 cup chopped fresh chives or 1 1/2 tablespoons dried chives
    • Topping:
    • 6 strips bacon, cooked, drained and crumbled


    Instructions


    1. Preheat oven to 350 degrees. Grease a casserole dish. In a medium saucepan, heat milk and cornmeal over medium heat, stirring constantly, until mixture bubbles and thickens, 5 minutes. Remove from heat.

    2. Mix together baking powder, pepper, and egg yolks. Mix egg mixture into cornmeal mixture. Stir in bacon and chives. Beat egg whites at high speed until stiff, but not dry, peaks form. Fold one-third beaten egg whites into batter. Fold in remaining egg whites.

    3. Pour batter into prepared dish. For topping, sprinkle bacon over batter. Bake spoonbread until golden and set, 45 to 50 minutes. Transfer dish to a wire rack to cool slightly.
