    Quick: Buttermilk Chocolate Bread

    • 1 cup sugar
    • 1/2 cup butter, softened
    • 2 eggs
    • 1 cup buttermilk
    • 1 3/4 cups flour
    • 1/2 cup unsweetened cocoa
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/3 cup chopped nuts


    Instructions


    1. Preheat oven to 350 degrees Grease bottom only of an 8x4 or 9x5" loaf pan.

    2. In lare bowl, combine sugar and butter, blending thoroughly. Add eggs and mix well. Stir in buttermilk. Add flour, cocoa, baking powder, baking soda and salt. Stir just until dry ingredients are moistened. Stir in nuts.

    3. Pour into prepared pan. Bake at 350 degrees for 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan; cool completely before slicing.

    4. Serves 12

    5. Note: to substitute for buttermilk, use 1 tablespoon vinegar or lemon juice plus milk to make 1 cup.

    6. Chocolate Honey Butter: 1/2 cup butter, softened, 2 tablespoons honey, 2 tablespoons chocolate syrup; In small bowl, combine all ingredients. Beat at highest speed until light and fluffy. Makes 1 cup.
