Quick: Chocolate Banana Nut Bread

- 3/4 cup butter, softened
- 1 cup sugar
- 2 eggs
- 3 very ripe bananas, mashed
- 2 cups all-purpose flour
- 1/3 cup cocoa powder
- 1 teaspoon vanilla
- 1 teaspoon baking soda, dissolved in 1/4 cup warm water
- 1 cup chopped pecans
Instructions
- Grease and flour 9x5" loaf pan. Preheat oven to 350 degrees.
- Cream butter in medium bowl; add sugar gradually until light and fluffy. Add eggs one at a time, beating well after each is added. Stir in bananas and beat well.
- Mix in one cup flour until blended, then add the other cup of flour. Beat in cocoa, vanilla and baking soda/water just until blended. Stir in nuts.
- Pour into loaf pan and bake about 70 minutes. Cool. Remove from pan and wrap well. Store at room temperature or refrigerate. Also freezes well.
