    Quick: Chocolate Nut Loaves

    List of Ingredients


    • 2 1/4 cups flour
    • 1 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 cup butter or margarine, softened
    • 2 cups sugar
    • 5 eggs
    • 3 squares Bakers unsweetened baking chocolate, melted, cooled slightly
    • 2 teaspoons vanilla
    • 1 cup buttermilk
    • 1/2 cup finely chopped Planters pecans
    • 1/2 cup sweetened dried cranberries


    Instructions


    1. Grease and flour two 9x5 loaf pans.

    2. Mix flour, baking soda and salt; set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Stir in melted chocolate and vanilla.

    3. Add flour mixture to chocolate mixture alternately with buttermilk, beating after each addition until smooth. Stir in nuts and cranberries. Pour evenly into prepared pans.

    4. Bake at 350 degrees for 50 to 55 minutes or until toothpick inserted in centers comes out clean. Cool in pans 10 minutes; remove from pans. Cool completely on wire racks. Sprinkle with powdered sugar, if desired.
