Muffins: Double Corn Muffins

- 1 1/2 cups all-purpose flour
- 1/2 cup stone ground cornmeal
- 1/3 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup melted butter or margarine
- 2/3 cup milk
- 1 egg
- 1 cup whole kernel corn, fresh or frozen, thawed
Instructions
- Preheat oven to 400 degrees. Grease 12 muffin cups or line with paper liners.
- In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In another bowl, combine the melted butter, milk and egg. Add the liquid ingredients to the dry ingredients. Add the whole kernel corn, stirring just until dry ingredients are moistened.
- Spoon batter into prepared muffin cups, dividing the batter evenly. Bake 15 to 20 minutes, or until golden.
