Biscuits: Jalapeno Cheese Biscuits

- 2 jalapeno peppers
- 2 cups dry packaged biscuit baking mix
- 2/3 cup milk
- 1/2 cup shredded cheddar cheese
- 1/2 cup melted butter, divided
Instructions
- Preheat oven to 450 degrees. Cut jalapenos lengthwise into halves; discard seeds. Chop finely.
- Combine baking mix, milk and Cheddar in a bowl; mix well. Add jalapenos and 1/4 cup butter. Beat with an electric mixer set at high speed for 30 seconds.
- Drop dough by spoonfuls 2 inches apart onto ungreased baking sheets.
- Bake until golden brown, about 10 minutes. Brush with remaining butter. Serve immediately.
