- 2 boxes Jiffy Corn Bread Muffin Mix
- 2 cups grated cheddar cheese
- 1 (15 ounce) can cream style corn
- 2 cups sour cream
- 2/3 cups oil
- 1 medium onion chopped
- 4 eggs, beaten
- 1/4 cup chopped jalapeno's or more to taste
Instructions
- Preheat oven to 350 degrees. Use 325 degrees if using a glass baking dish. Combine all ingredients in a large mixing bowl and mix well.
- Pour into a 13x9 inch pan and bake for 1 1/2 to 2 hours. Check after baking for about an hour. If necessary, cover edges with foil to prevent over browning along sides of dish. Use toothpick in center to test for doneness.
