    Quick: Low Fat Banana Date Bread

    List of Ingredients


    • 1/2 cup applesauce
    • 1/2 cup brown sugar
    • 4 egg whites
    • 2 medium ripe bananas, sliced
    • 2 cups all-purpose flour
    • 1/2 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt, optional
    • 1 teaspoon cinnamon
    • 1/2 cup chopped dates


    Instructions


    1. In a large bowl, combine all ingredients except dates. With electric mixer on medium, beat bread mixture until smooth, about 2 or 3 minutes. When mixture is smooth, stir in dates; set aside.

    2. Lightly oil a microwave ring mold. Use paper towel to wipe off excess oil. Pour batter into ring mold. Microwave on medium high for 15 minutes, or until toothpick inserted in bread comes out clean. Rotate dish half way through cooking time. Let stand for 10 minutes before inverting dish on cooling rack. Cool completely before slicing.

    3. Makes 8 to 10 servings
