    Quick: Mexican Cornbread

    List of Ingredients


    • 1 1/2 cups martha white cornmeal
    • 3 eggs, beaten
    • 1 cup cream style corn
    • 2/3 cup cooking oil
    • 1 cup buttermilk
    • 1 hot pepper, chopped
    • 1/2 green bell pepper, chopped
    • 1 cup grated cheddar cheese


    Instructions


    1. Mix all ingredients together, except cheese.

    2. Pour 1/2 of batter into well greased and floured cast iron skillet.

    3. Sprinkle cheese over top, then add remaining batter.

    4. Cook at 375 degrees until golden brown.

    5. Serves 10 to 12.
