Muffins: Fresh Lemon Muffins With Lemon Glaze

- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sugar
- 2 teaspoons grated lemon rind
- 2 large eggs, lightly beaten
- 2/3 cup fresh lemon juice
- 1/2 cup unsalted butter, melted
- 1 teaspoon lemon extract
- 1/4 cup sugar
- 1/4 cup fresh lemon juice
Instructions
- Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine eggs and next 3 ingredients; add to flour mixture, stirring just until dry ingredients are moistened.
- Spoon batter into 8 paper lined muffin pans. Bake at 400 degrees for 20 to 25 minutes, or until a wooden pick inserted in center comes out clean.
- Combine 1/4 cup sugar and 1/4 cup lemon juice in a small saucepan; cook over medium heat, stirring constantly, until sugar dissolves. Remove muffins from oven, and poke holes in tops of muffins with a wooden pick; drizzle with warm glaze. Cool muffins in pans 5 minutes; remove from pans and cool completely on a wire rack.
