Paula Deen's Pineapple Pumpkin Bread

- 3 1/2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 4 large eggs
- 1 cup vegetable oil
- 1 (16 ounce) can pumpkin
- 1 (8 ounce) can crushed pineapple, drained
- 1 cup chopped pecans
Instructions
- Preheat oven to 350 degrees. Grease and flour 2 (9x5) inch loaf pans. In a large bowl, combine flour and next 7 ingredients. Add eggs and oil; beat well. Stir in pumpkin, pineapple and pecans. Pour batter evenly into prepared pans. Bake 35 to 40 minutes, or until a tester inserted in center comes out clean.
