    Paula Deen's Pineapple Pumpkin Bread

    List of Ingredients


    • 3 1/2 cups all-purpose flour
    • 2 cups sugar
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground nutmeg
    • 4 large eggs
    • 1 cup vegetable oil
    • 1 (16 ounce) can pumpkin
    • 1 (8 ounce) can crushed pineapple, drained
    • 1 cup chopped pecans


    Instructions


    1. Preheat oven to 350 degrees. Grease and flour 2 (9x5) inch loaf pans. In a large bowl, combine flour and next 7 ingredients. Add eggs and oil; beat well. Stir in pumpkin, pineapple and pecans. Pour batter evenly into prepared pans. Bake 35 to 40 minutes, or until a tester inserted in center comes out clean.
    2. Yield: 2 loaves
