Potato Rolls

List of Ingredients
- 1 envelope active dry yeast
- 1/2 cup warm water
- 1 cup milk
- 1/2 cup sugar
- 1 cup mashed potatoes
- 1 1/2 teaspoons salt
- 2/3 cup butter flavored shortening
- 2 large eggs
- 5 to 6 cups all-purpose flour
Instructions
- Combine yeast and warm water, let stand 5 minutes.
- Combine milk and next 3 ingredients in a small saucepan. Cook, stirring until mixture begins to simmer. Pour over shortening in a bowl and stir until shortening melts.
- Combine yeast mixture, milk mixture and eggs in a large micing bowl. Gradually add 3 cups flour, beating until smooth. Stir in remaining flour to make a soft dough.
- Place into a well greased bowl, turning to grease top of dough. Cover and chill 8 hours.
- Punch dough down, turn out onto a floured surface, knead 4 or 5 times. Shape dough into 3/4 inch balls, place 3 balls in each well greased muffin pan. Let rise.
- Bake at 425 degrees for 8 to 10 minutes or until golden brown.
- Yield: 2 1/2 dozen
