    List of Ingredients


    • 1 envelope active dry yeast
    • 1/2 cup warm water
    • 1 cup milk
    • 1/2 cup sugar
    • 1 cup mashed potatoes
    • 1 1/2 teaspoons salt
    • 2/3 cup butter flavored shortening
    • 2 large eggs
    • 5 to 6 cups all-purpose flour


    Instructions


    1. Combine yeast and warm water, let stand 5 minutes.
    2. Combine milk and next 3 ingredients in a small saucepan. Cook, stirring until mixture begins to simmer. Pour over shortening in a bowl and stir until shortening melts.
    3. Combine yeast mixture, milk mixture and eggs in a large micing bowl. Gradually add 3 cups flour, beating until smooth. Stir in remaining flour to make a soft dough.
    4. Place into a well greased bowl, turning to grease top of dough. Cover and chill 8 hours.
    5. Punch dough down, turn out onto a floured surface, knead 4 or 5 times. Shape dough into 3/4 inch balls, place 3 balls in each well greased muffin pan. Let rise.
    6. Bake at 425 degrees for 8 to 10 minutes or until golden brown.
    7. Yield: 2 1/2 dozen
