    Pumpkin Bread With Coconut Pudding

    List of Ingredients


    • 2 cups all-purpose flour
    • 2 cups sugar
    • 2 (3 1/2 ounce) packages instant coconut pudding mix
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 teaspoon cinnamon
    • 1 1/4 cups vegetable oil
    • 5 eggs
    • 2 cups canned pumpkin


    Instructions


    1. Preheat oven to 325 degrees. Lightly grease two 9x5 inch loaf pans.
    2. In a large bowl, combine flour, sugar, pudding mix, baking soda, salt and cinnamon. Stir the oil, eggs and pumkin until just blended. Stir flour mixture into egg mixture. Pour batter into prepared pans. Bake in preheated oven for 1 hour or until toothpick inserted in center comes out clean. Remove from oven and let stand 15 minutes, then remove from pan.
