Quick: Soft Ginger Bread

- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1 1/2 teaspoons ground ginger
- 3/4 teaspoon cloves
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon salt
- 1/2 cup soft shortening
- 1/2 cup sugar
- 2 eggs
- 1/2 cup molasses
- 1/2 cup buttermilk
Instructions
- Preheat oven to 350 degrees. Grease and lightly flour an 8 inch square pan. Sift flour, baking soda and spices together and set aside. Put shortening and sugar into large mixer bowl and cream together until fluffy. Add eggs, one at a time, beating well after each addition. Mix buttermilk with molasses. Add to creamed mixture alternately with dry ingredients, mixing well. Pour into prepared pan and bake 25 to 30 minutes.
- Yields 9 servings.
