Quick: Strawberry Pecan Bread

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon grated nutmeg
- 1/2 cup chopped pecans
- 2 large eggs
- 1/2 cup orange juice
- 1/4 cup milk
- 2 teaspoons grated orange peel
- 1/3 cup butter or margarine, melted and cooled
- 1 cup chopped fresh or frozen strawberries
- Glaze:
- 3 to 4 fresh strawberries
- 3/4 cup confectioners' sugar
- 1 tablespoon warm water
- 1 teaspoon butter or margarine, softened
Instructions
- Preheat oven to 350 degrees. Grease and lightly flour a 4 1/2x8 1/2 inch loaf pan. In a large bowl, combine flour, sugar, baking powder, salt, baking soda and nutmeg; mix well. Stir in pecans.
- In a medium bowl, beat eggs with orange juice, milk and orange peel; blend in butter. Add liquid mixture to flour mixture, stirring just until dry ingredients are moistened. Gently fold in strawberries.
- Spread batter in prepared loaf pan. Bake bread until golden brown and a wooden skewer inserted in center comes out clean, 55 to 65 minutes. Transfer pan to a wire rack; cool for 10 minutes. Turn bread onto rack; cool completely.
