    Quick: Strawberry Pecan Bread

    • 2 cups all-purpose flour
    • 1/2 cup granulated sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon grated nutmeg
    • 1/2 cup chopped pecans
    • 2 large eggs
    • 1/2 cup orange juice
    • 1/4 cup milk
    • 2 teaspoons grated orange peel
    • 1/3 cup butter or margarine, melted and cooled
    • 1 cup chopped fresh or frozen strawberries
    • Glaze:
    • 3 to 4 fresh strawberries
    • 3/4 cup confectioners' sugar
    • 1 tablespoon warm water
    • 1 teaspoon butter or margarine, softened


    Instructions


    1. Preheat oven to 350 degrees. Grease and lightly flour a 4 1/2x8 1/2 inch loaf pan. In a large bowl, combine flour, sugar, baking powder, salt, baking soda and nutmeg; mix well. Stir in pecans.

    2. In a medium bowl, beat eggs with orange juice, milk and orange peel; blend in butter. Add liquid mixture to flour mixture, stirring just until dry ingredients are moistened. Gently fold in strawberries.

    3. Spread batter in prepared loaf pan. Bake bread until golden brown and a wooden skewer inserted in center comes out clean, 55 to 65 minutes. Transfer pan to a wire rack; cool for 10 minutes. Turn bread onto rack; cool completely.
