    Quick: Sweet Buttermilk Cornbread

    • 1 cup unbleached all-purpose flour
    • 1 cup stone ground cornmeal
    • 1/4 cup sugar
    • 1 tablespoon baking powder
    • 1 teaspoon baking soda
    • 3 tablespoons light butter, melted
    • 1 1/3 cups fat free buttermilk
    • 1/2 cup eggbeaters


    Instructions


    1. Preheat oven to 425 degrees. Butter a 10 inch iron skillet. In a bowl, stir together flour, cornmeal, sugar, baking powder and baking soda.

    2. In a small bowl, stir together melted butter and buttermilk with an electric mixer at low speed, beat in eggbeaters. Pour liquid all at once into flour mixture and stir only until combined. Do not over mix. Pour batter into prepared pan and bake for 30 minutes or until golden.
