Toasted Coconut Banana Bread

- 1 cup flaked coconut
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 3/4 cup sugar
- 1 cup finely chopped walnuts or pecans
- 1 egg
- 1/4 cup milk
- 1/3 cup salad oil
- 1 teaspoon vanilla
- 2 large, soft ripe bananas
Instructions
- Spread coconut in a shallow pan and bake in a 350 degree oven, stirring occasionally, until lightly toasted (12 to 15 minutes). Set aside to cool.
- In a large bowl, mix flour, baking powder, cinnamon, salt, baking soda and sugar. Stir in nuts and coconut. Beat egg with milk, salad oil and vanilla until well combined. Mash bananas (you should have about 1 cup); blend with egg mixture. Add banana mixture to dry ingredients, mixing just until blended.
- Spread into a greased, lightly floured 4 1/2 x 8 1/2 inch loaf pan. Bake in a 350 degree oven until loaf is well browned and a wooden pick inserted in center comes out clean (50 to 60 minutes). Let stand 10 minutes, then turn out onto a wire rack to cool completely. Flavor is best if, after cooling, bread is wrapped and allowed to stand at least one day.
