Chocolate Chip Bubble Biscuits

- Biscuits:
- 2 1/2 cups Hungry Jack Complete Pancake and Waffle mix (just add water type)
- 1/3 cup granulated sugar
- 1/2 cup miniature semisweet chocolate chips
- 1/2 cup water
- 1/2 cup sour cream
- 1/2 teaspoon vanilla
- Topping:
- 1/4 cup granulated sugar
- 1/4 cup finely chopped walnuts, optional
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat oven to 375 degrees. Grease an 8 or 9 inch square pan.
- Biscuits: In a large bowl, combine pancake mix, sugar and chocolate chips; stir until just mixed. Add water, sour cream and vanilla; blend well. On a well floured surface, shape dough into 16 balls, about 2 inches in diameter. Place dough balls in rows of 4x4 in the pan.
- Topping: In a small bowl, combine all topping ingredients and mix well. Sprinkle evenly over the dough balls in pan. Bake for 25 to 30 minutes or until golden brown. Let cool 10 minutes before serving. Serve warm.
- Yield: 16 biscuits
- High Altitude: Add 1/4 cup flour to dry pancake mix. Bake as above.
