Doughnuts: French Beignets

- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 cup water
- 1/2 cup butter
- 5 large eggs
- 1 teaspoon lemon zest
- Powdered sugar (as needed)
- 1/2 to 1 cup jam or jelly, melted
- Oil, for deep frying (amount needed may vary)
Instructions
- Mix together flour, sugar, and salt.
- Heat water and butter to a boil in a small saucepan. Add the flour mixture all at once and stir until it comes into a ball.
- Remove pan from heat, and add eggs one at a time, allowing each to incorporate before adding another. Stir in lemon zest.
- Heat oil in a deep fryer and add batter 1 teaspoonful at a time, cooking for 5 to 7 minutes, and turning over halfway through cooking, until nicely golden.
- Drain on paper toweling, and after they have cooled a few moments, you may sift powdered sugar over them and serve with melted jam (as a dipping sauce).
