Eggs: Gratineed Eggs

- 1 pound bulk sausage
- 1 teaspoon butter
- 8 sliced mushrooms
- 1 medium chopped red onion
- 12 beaten eggs
- 1 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon oregano
- 8 ounces shredded mozzarella cheese
- 2 medium tomatoes, chopped
Instructions
- Preheat oven to 400 degrees. Grease a 13x9x2" baking pan.
- Crumble and brown sausage in a skillet. Drain well. Spread sausage in baking pan.
- Add butter to the same skillet; melt and saute mushrooms and onion.
- Add to the sausage in the baking pan.
- Blend remaining ingredients together in a large mixing bowl.
- Pour this mixture over the sausage and onions.
- Bake 45-60 minutes or until a knife inserted in the center comes out clean.
