    Potatoes: Ham And Cheese Brunch Bake

    List of Ingredients


    • 1 (24 ounce) package frozen hash brown potatoes
    • 2 cups cooked ham, cubed
    • 2 cups shredded cheddar cheese, divided
    • 1 small onion, chopped
    • 1 (16 ounce) carton low fat sour cream
    • 1 (10 3/4 ounce) can cheddar cheese soup, undiluted
    • 1 (10 3/4 ounce) can cream of potato soup, undiluted
    • Freshly ground Black Pepper to taste


    Instructions


    1. Thaw the hash browns and combine them in a large mixing bowl with the diced ham, 1/2 cup of the shredded cheddar cheese and the chopped onion.

    2. In a seperate mixing bowl, blend together the sour cream, remaining shredded cheddar cheese, soups and black pepper.

    3. Add the sour cream/soup mixture to the hash brown/ham mixture, making sure all ingredients are thoroughly combined.

    4. Pour the mixture into a lightly greased 3-quart oven proof baking dish.

    5. Top with more cheese and bake in a preheated 350 degree oven for 1 hour.

    6. Let stand a few minutes before serving.

    7. Serves 10 to 12
