Pancakes: Oatmeal Pancakes

1 cup quick-cooking rolled oats
½ cup flour
2 teaspoons baking powder
1 cup hot water or milk
2 eggs, separated, the whites stiffly beaten
½ cup milk
2 tablespoons corn oil
1 teaspoon salt
Recipe
Soak the oats in the hot water or milk for about 5 minutes. Beat the egg yolks with the ½ cup of cold milk and the oil. Add to the oatmeal mixture. Combine the baking powder, salt and flour, and stir into the oatmeal mixture. Fold in the stiffly beaten egg whites.
Makes about twelve 4-inch pancakes
