    Eggs: Picante Potato Pie

    List of Ingredients


    • 5 eggs
    • 2 1/2 cups frozen, shredded hash brown potatoes
    • 1/2 cup shredded sharp cheddar cheese
    • 1 cup monterey jack cheese
    • 2/3 cup picante sauce
    • 2 green onions, sliced
    • 1/4 teaspoon salt
    • 6 strips bacon, cooked and crumbled
    • Additional sauce


    Instructions


    1. In a bowl, beat eggs. Add picante sauce, onions and salt. Stir in hash browns. Pour into a greased 9" pie plate. Cover and refrigerate overnight.

    2. Remove from refrigerator 30 minutes before baking. Sprinkle with cheese. Bake at 350 for 25 minutes.

    3. Sprinkle on bacon and bake 5 to 10 minutes longer or until a knife inserted near center comes out clean.

    4. Serve with extra sauce.

    5. Serves 6
