Eggs: Picante Potato Pie

List of Ingredients
- 5 eggs
- 2 1/2 cups frozen, shredded hash brown potatoes
- 1/2 cup shredded sharp cheddar cheese
- 1 cup monterey jack cheese
- 2/3 cup picante sauce
- 2 green onions, sliced
- 1/4 teaspoon salt
- 6 strips bacon, cooked and crumbled
- Additional sauce
Instructions
- In a bowl, beat eggs. Add picante sauce, onions and salt. Stir in hash browns. Pour into a greased 9" pie plate. Cover and refrigerate overnight.
- Remove from refrigerator 30 minutes before baking. Sprinkle with cheese. Bake at 350 for 25 minutes.
- Sprinkle on bacon and bake 5 to 10 minutes longer or until a knife inserted near center comes out clean.
- Serve with extra sauce.
