Pancakes: Pina Colada Pancakes

- Pancakes:
- 1 cup reduced fat bisquick
- 1 egg
- 1/4 cup sugar
- 1/2 cup water
- 1 tablespoon coconut extract flavoring
- Topping:
- 1 (8 ounce) can crushed pineapple in syrup, undrained
- 2 tablespoons cornstarch
- 1/4 cup cold water
- 1 tablespoon coconut extract flavoring
- 1 teaspoon rum extract flavoring
- 1/4 cup flaked coconut, divided
Instructions
- For Pancakes: Preheat griddle.
- Combine all ingredients.
- Drop batter by tablespoonfuls to make pancakes that are 2 1/2" in diameter.
- Cook until bubbles appear all over top.
- Turn carefully and cook until done.
- Remove to a platter.
- Makes 20 2 1/2" pancakes.
- For Sauce: Put pineapple in a small saucepan.
- Heat over medium heat until bubbling slightly, stirring occasionally.
- Combine cornstarch with cold water.
- Stir into hot pineapple, stirring constantly, until mixture is thickened.
- Remove from heat.
- Stir in coconut extract and rum extract.
- To serve: Place 5 pancakes on each serving plate. Top each serving with 1/4 cup of the sauce. Sprinkle 1 tablespoon Coconut over each serving.
