    Vegetable: Potato Flapjacks

    • 3 cups cold mashed potatoes
    • 1/4 pound hot turkey sausage, casings removed, crumbled and cooked
    • 1/2 cup frozen whole kernel corn
    • 1/4 cup chopped green onions, divided
    • 1 tablespoon chopped fresh parsley
    • 1/4 teaspoon salt
    • 1/8 teaspoon freshly ground black pepper
    • 1/2 cup nonfat sour cream


    Instructions


    1. In a large bowl, combine potatoes, sausage, corn, 2 tablespoons green onions, parsley, salt, and pepper. Mix well.

    2. Spray a large nonstick skillet with vegetable cooking spray. Heat skillet over medium high heat. Place about 3 heaping tablespoons of potato mixture in skillet; flatten each into a pancake with a spatula. Make 3 more pancakes in skillet as directed.

    3. Cook potatoes, turning once and pressing with a spatula, until browned on both sides, about 10 minutes. Place pancakes on a plate; cover with foil and keep warm. Repeat with remaining potato mixture.

    4. In a small bowl, combine sour cream and remaining green onions. Serve immediately with sour cream mixture.
