Vegetable: Potato Flapjacks

- 3 cups cold mashed potatoes
- 1/4 pound hot turkey sausage, casings removed, crumbled and cooked
- 1/2 cup frozen whole kernel corn
- 1/4 cup chopped green onions, divided
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1/2 cup nonfat sour cream
Instructions
- In a large bowl, combine potatoes, sausage, corn, 2 tablespoons green onions, parsley, salt, and pepper. Mix well.
- Spray a large nonstick skillet with vegetable cooking spray. Heat skillet over medium high heat. Place about 3 heaping tablespoons of potato mixture in skillet; flatten each into a pancake with a spatula. Make 3 more pancakes in skillet as directed.
- Cook potatoes, turning once and pressing with a spatula, until browned on both sides, about 10 minutes. Place pancakes on a plate; cover with foil and keep warm. Repeat with remaining potato mixture.
- In a small bowl, combine sour cream and remaining green onions. Serve immediately with sour cream mixture.
