Eggs: Salsa Veggie Scramble

- 2 cups eggbeaters
- 1 cup low fat cottage cheese
- 1 cup chopped green pepper
- 1/2 cup chopped onion
- 1/2 cup reduced fat mild cheddar cheese
- 1/2 cup Taco Bell Home Originals Thick N' Chunky Salsa
Instructions
- Beat eggbeaters and cottage cheese in a small bowl with wire whisk until well blended.
- Spray medium nonstick skllet with cooking spray.
- Add green pepper and onion; cook on medium high heat 2 to 4 minutes or until tender, stirring occasionally.
- Add eggbeaters mixture and cheddar cheese.
- Reduce heat to medium.
- Cook 8 to 10 minutes or until set, stirring frequently.
- Serve topped with salsa.
- Makes 4 servings.
