Eggs: Sausage Egg And Mushroom Casserole

- 1 pound breakfast sausage links or sweet italian sausage
- 6 ounces medium mushrooms, quartered
- 6 large eggs
- 2 cups milk
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 4 sliced white sandwich bread, cut into 3/4 inch cubes
- 1 cup sharp cheddar cheese
Instructions
- In a large skillet over medium heat, cook the sausage links, turning occasionally, until nicely browned, 15 to 20 minutes. Drain the sausage on paper towels, let cool slightly, then slice diagonally 1/4 inch thick. Add the mushrooms to the drippings in the skillet and cook until lightly browned, about 5 minutes. Set aside.
- Butter a 13x9 inch baking dish. In a large bowl, whisk together the eggs, milk, salt and mustard. Fold in the bread cubes, cheddar cheese, sausage slices and mushrooms. Pour into the prepared dish. Cover and refrigerate for at least 2 hours or overnight.
- Preheat the oven to 350 degrees. Uncover the chilled casserole and bake until set in the middle and golden brown, about 35 minutes. Serve warm.
