Waffles: Waffle House Waffles

- 1 1/2 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 egg
- 1/2 cup plus 1 tablespoon sugar
- 2 tablespoons soft butter
- 2 tablespoons shortening
- 1/2 cup half and half
- 1/2 cup milk
- 1/4 cup buttermilk
- 1/4 teaspoon vanilla
Instructions
- The day before you are going to make the waffles. Combine flour, salt and baking soda in a medium bowl. Stir well to combine.
- Lightly beat the egg in another medium bowl. Add the sugar, butter and shortening and beat with an electric mixer until smooth.
- Add the half and half, milk, buttermilk and vanilla. Beating until well blended. Add the dry flour mixture to the wet mixture while beating until smooth. Pour into a bowl, cover and chill overnight.
- When ready to make waffles the day of. Start heating up the waffle iron. While it is heating up. Take the batter out of the refrigerator to warm up a bit (or you can take it out 15 to 20 minutes before you heat up the waffle iron).
- Spray the waffle iron with a vegetable spray, coating well. Spoon 1/3 to 1/2 cup of the batter into the waffle iron and cook for 3 to 4 minutes or until the waffle is lightly brown.
- Yield: 6 waffles
