Apple Date Nut Blondies

- 2 medium granny smith or other firm, tart cooking apples, peeled cored and finely chopped
- 2 1/2 cups all-purpose flour, divided
- 3/4 cup butter flavored crisco
- 1 cup firmly packed light brown sugar
- 2 eggs
- 2 tablespoons vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup finely chopped pecans
- 1/2 cup finely chopped dates
- Confectioners' sugar
Instructions
- Heat oven to 350. Grease a 15x10x1" jelly roll pan with butter flavored crisco.
- Toss apples with 1/4 cup flour.
- Place butter flavor crisco and brown sugar in a large bowl. Beat at medium speed of an electric mixer until well blended.
- Beat in eggs and vanilla.
- Combine remaining 2 1/4 cups flour, baking powder and salt.
- Add gradually to creamed mixture at low speed. Beat until well blended.
- Fold in apple mixture, nuts and dates. Spread in greased pan.
- Bake at 350 for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
- Cool completely.
- Cut into bars about 2 1/2 x 1 1/2 inches.
- Serve immediately or refrigerate.
- Dust with confectioners suger just before serving.
