List of Ingredients
- 2 (14 1/2 ounce) cans chicken broth
- 2 (15 ounce) cans whole kernel corn
- 1 large white onion, diced
- 3 cups diced potatoes
- 2 (12 ounce) cans evaporated milk
- 1/3 cup butter
- salt and pepper to taste
Instructions
- In a large pot over medium heat, combine broth, corn and potatoes.
- Bring to a boil,reduce heat, cover and simmer 15 to 20 minutes, until potatoes are just tender.
- Stir in evaporated milk and butter, until butter is just melted.
- Season with salt and pepper and serve.
- Makes 8 servings at 330 calories each.
Final Comments
You can add more spices or whatever you like. I have used 3 cups O'Brien potatoes which adds more onion and red and green bell pepper and speeds up the cooking time if your in a big hurry to throw something quick together and dirty less dishes to wash. I also use fat free evaporated milk, light Land O Lakes butter and fat free chicken broth. Which will reduce the calories.
