Almond Buttermilk Cake

- 1 cup butter, softened
- 2 eggs
- 2 cups sugar
- 1 teaspoon vanilla
- 1 1/2 teaspoons almond extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups buttermilk
- Almond Glaze:
- 2 tablespoosn melted butter
- 1 teaspoon almond extract
- 2 cups powdered sugar
- 1 teaspoon milk (needs more, about 1 tablespoon or more)
Instructions
- Cream butter, eggs, sugar, vanilla and almond extract. Combine flour, baking soda and salt together and add to the creamed mixture alternately with buttermilk, making sure it's well blended. Pour into a 9x13 inch pan, tube pan, or bundt pan (I used a bundt pan) and bake at 350 degrees for 40 minutes. Cool and frost with Almond glaze. Garnish with slivered almonds.
- Note: I think lemon juice instead of milk might be a nice touch in the frosting. Also you could use vanilla instead of almond extract or even orange.
